Your modem receives an address for a duration of the session, your SIM is just a storage of your credentials.
Depending on your provider you may need to change or add APNs. Some providers can work with wrong APNs.
With the modem in ECM mode you only need a regular DHCP interface on the host side.
If you will send to the modem AT+QNETDEVCTL=3,1,0 once, it should connect automatically.
