Wich is the best performer for Italian network between the
RM520N-GL AAR and RM520N-EU? Is the EU version better since is tailored for my country? Or everything I achive with EU version can be achieved with GL version in my country?

Actually, GL and EU work on your region. No data to confirm which is better.
I have GL and EU both versions with waveshare box. GL version does only 2xLTE +N78 nsa agregation, EU version version on the same network and sim does 4xLTE+N78 nsa. But on both modems speed is pretty much the same- around 500Mbps. I do not have info on 5G SA, as it is not enabled on my operators sim. EU version is more suitable for EU bands aggregation theoretically…
By the way, I am in Latvia
