Is it possible to enable diagnostic logs on USB mounted EM060K-G? I see four /dev/USB0-4 devices.

Yes, EM060K supports USB-based “software debugging”, and the multiple /dev/ttyUSB* ports you see are expected.
The AT interface itself is provided via USB (USB AT port + USB MODEM port). For diagnostic (DIAG/QCDM) logging, you can capture logs if the DIAG/QCDM interface is exposed in your current USB composition/driver (typically captured using Quectel’s QLog on Linux/Android).
